Formulation of Water-in-Water Dispersions by Controlled Phase Separation of Biopolymers

Description
Incompatible biopolymers may rapidly phase separate upon mixing. These phase-separated phases can be homogeniyed to create water-in-water dispersions. Upon induction of gelation one of both phases may be solidified to yield gels containing water droplets of an aqueous phase containing solid gelled particles. If the gelation is conductde while the dispersion is sheared potentially novel non-spherical particles may be obtained. The purposes of this project is to evaluate the feasability of producing such particles.
