Beschreibung

For value-adding by-product utilisation in industrial  tropical fruit processing, strategies are to be developed and evaluated to reduce waste volumes and to make high-value components, especially of mango peels, available for a use as food and feed ingredients. As a prerequisite, a process for the economic production of dried fruit residues of constant quality is to be developed. To deduce suitable products and production concepts, the comparative advantages of by-products from mango peels are to be identified by purposively studying recovery techniques, structural and functional properties of the biopolymers and fractions thereof, and co-extractable bioactive components.
